Jollof rice is a dish that is most popular in West African countries. It is known to be a one pot dish, making it a perfect quick and tasty meal.
The name 'Jollof rice' comes from the Wolof people, and is also known as benanchin, or for French speakers 'riz au gras' - meaning 'fat rice', though not everyone is happy with that name.
The popular West African dish can be made for special occasions like weddings, baby showers, made in pressed shapes for a more formal presentation of the dish. Jollof rice is usually served with a side salad or with a meat side serving.
Nigerian and Ghanaian Jollof are the most popular of the lot - though don't ask us which is better!

All of these dishes have something special to them, but they are mostly prepared the same way. Here's our all-purpose Jollof recipe:

Chop up the vegetables and slice the meat into smaller pieces

Heat the pan or pot and fry the onions

Once the onions are caramelised, add meat or fish. Next put in your spices, veggies, and broth

Add the rice and bring the pot to boil

Once boiling, turn the pot down to a simmer until the rice and meat are cooked.
Here's a tip: make this dish easier by using use pre-cooked rice and pre-cooked meat. You could even use some leftover meat.
